CARM & GIA METROPOLITAN OPENING SOON IN NORTH AURORA
AURORA, Colorado - Chef & restaurateur Razz Cortes announced that Carm & Gia Metropolitan, her long-awaited burger and milkshake outpost, will begin serving guests in northwest Aurora in mid-December. The latest addition to Aurora’s diversity in cuisine has been in development for the greater part of 2019.
The restaurant’s new home at 9598 East Montview Boulevard—a former beauty salon and drive-thru bank—has undergone significant renovations to turn it into the sleek, nouveau retro eatery that eastside residents in Aurora, Stapleton and Denver will welcome to the neighborhood. In a few short weeks, guests and neighbors will be able to visit Carm & Gia Metropolitan for some of the best hamburgers, sandwiches, burritos, shakes and drinks in town.
Cortes is a life-long foodie, trend setter, chef, previous restaurant owner and high-tech corporate ‘refugee’. Originally from Mexico, she spent her formative years in Chicago, but has called Aurora home since the mid-nineties. Bringing Carm & Gia Metropolitan to her adopted home of Aurora fulfills a lifelong dream to make great food and build a sense of community in the city she loves.
“Our vision has been to create a space where all are welcomed and where memories are created,” Cortes said. “We are a family with strong roots in Chicago and now deep ties in Denver, a place we've called home since the early nineties. Carm & Gia Metropolitan is an homage to Chicago neighborhood standards where the legend is often repeated – ‘there is a tavern on every corner’; there was (and in some corners there still is) a hotdog stand every few blocks. The Denver metro area has a similar neighborhood vibe and appreciation for simple, heartwarming environments where multiple generations gather for solid friendship and great eats.”
The eatery is one of several opening soon in northwest Aurora that are benefitting from the city of Aurora's Restaurant Incentive Program, an innovative public-private partnership that targets redevelopment of restaurants and blighted properties in that area with a focus on up-and-coming concepts and chefs.
